Peregrine Biotechnology will create ducks that produce foie gras without the need for force-feeding. Using CRISPR, we will knock out genes involved in appetite control and lipid metabolism to produce ducks that naturally develop fatty livers. The added labor associated with force-feeding is the largest contributor to the cost of foie gras production. By eliminating force-feeding, we will improve animal welfare, create a product that is more acceptable to consumers, and drastically reduce costs for foie gras producers.
